West Coast Balsamic Salmon with Steamed Swiss Chard |

4 boneless, skinless salmon fillets, about 5 oz. (150 g) each |

Salt and pepper |
 |
1 Tbsp. (15 mL) each balsamic vinegar and honey |
 |
1 clove garlic, minced |
 |
8 cups (2 L) lightly packed, chopped Swiss chard leaves and stems |

1/4 cup (50 mL) very thinly sliced red onion |
 |
1 Tbsp. (15 mL) butter |

Season the salmon with salt and pepper to taste. Place on the cooking plate. Stir the balsamic vinegar with the honey and garlic. Drizzle over the salmon. |

Toss the Swiss chard with the red onion. Spread out in the large capacity bowl. Steam for 15 minutes or until salmon flakes when lightly tested with a fork and Swiss chard is wilted. |

Toss the Swiss chard with butter; season to taste with salt and pepper. Divide between four serving plates and top with salmon. Drizzle the salmon with any cooking juices that have pooled on the tray. |
